I think the prequels are worth watching if for no other reason than they teach a very valuable lesson: sometimes, total creative freedom isn't necessarily a good thing.
The original trilogy was an amazing thing, and it pretty much all came from the mind of George Lucas, but because he was still kind of a novice director and creative mind, he needed a team of people to help rein in his vision. People weren't sure of him yet, and technology wasn't nearly what it is today, so he had to make a few compromises. By the time the prequels came around, George Lucas and Star Wars were one and the same, so, why not let Lucas have total free reign? We were finally going to get Star Wars the way Lucas wanted to tell it all along! And... well, we know what happened.
You can be the most creative person on the planet, you can have grand visions of far off lands and epic battles, but sometimes, you need a buffer. You need some people to go, "Maybe that's not the best idea." You need limitations in order to push the boundaries of those limitations. When you have total control, things can get out of control pretty quickly.
